Potatoes contain antinutrient saponin compounds that have a particular chemical structure that allows them to bind to the surface of your intestinal cells. These saponins create holes in the surface membrane of the cells which line the gut (enterocytes), allowing a variety of toxins found in the gut to destroy the cells.
